A simple Honey Cheese Pizza

Just for fun - I decided to figure out how well honey might do on a pizza. My first stab was a hit (even if the video wasn't). There is something about the flavors in this that really work. I'm sure you could use some store-bought dough or pizza crust if that is your thing, but I never mind making from scratch since it only takes a couple of moments.
The chicken was a welcome and last-minute addition as I love to me some protein. I just can't say enough about how much the honey loved getting together with the cheese. I would imagine there are probably some worthwhile frozen pizzas that wouldn't complain getting a squeeze or two.
Ingredients
Pizza crust
1 tsp yeast
3/4 cup lukewarm water
2 cups flour
1 tbsp. honey
1 tsp salt
3 tbsp. olive oil
The rest of the stuff
1 tbsp butter mixed with 1 tbsp olive oi
1/2 cup ricotta
1 cup shredded mozzarella (I used fresh little balls from my local grocery)
1 cup shredded fontina
2-3 tbsp honey (to drizzle). More if you like!
Optional - boneless skinless chicken thights
Optional - crushed red pepper to taste
Optional - fresh oregano
Directions
Mix together the water, yeast, olive oil, honey and a 1/4 cup of the flour and let this sit for 5-10 minutes (let that yeast be its best self)
Add in the rest of the flour and then the salt and mix for another 7-8 minutes.
Let this rise for a couple hours.
Roll out the dough and don't be too picky on shape. Think rustic.
Spread the butter/olive-oil mix over the dough and then do the same with the ricotta
Evenly spread the fontina and mozzarella over the dough
Add chicken and crushed red pepper now if you like.
Bake at 450 degrees until golden and drizzle with honey and sprinkle with oregano
